Chicken Schnitzel in Wine




I know what you're thinking.
Schnitzel in wine? Say what???
But, look at it!
Doesn't it look good?
Exactly!
So, here is how I made it...

Take chicken breasts and pound them out with a mallet until flat.
Dip them into flour, then beaten eggs, then bread crumbs.
Fry them in oil. When one side is golden brown, flip the meat over.
When that side is golden brown, throw a slice of cheese on it.
Your pick. Don't let me be the boss of you.
Meanwhile...across town...
Okay, across the stove.
Heat another pan with butter and add mushrooms/
Do NOT crowd your mushrooms or they will not brown properly.
Did you know that?
I learned that from my hero, Julia Child.
Add some white wine to the mushrooms, stir for a bit and then add the chicken schnitzel for about 10 minutes.
Delish!
