Vegetable Turkey Meatball Soup

Because this soup didn't exist anywhere, I had to invent it.
The vegetables are healthy and give the soup a fresh taste, while the meatballs kick it up a notch.
If there's anything I can't stand it's boring soup.
What can I say? We all have our deep dark secrets.



Ingredients:
Half a head of chopped savoy cabbage, 5-6 diced carrots, chiopped or red pepper, chopped baby Bok Choy, 3 chopped green onions, yellow beans (I used canned cuz I'ze lazy), roma tomatoes (optional), 3 ribs of chopped celery, chicken or veggie broth, ground turkey (optional), chicken broth, maggi seasoning

Fill pot partially with water and add broth (I used the whole chicken broth container). Add chopped veggies.


Continue to add chopped veggies. Ignore the magnet on the stove. It's a joke...sort of...smile emoticon



To the ground (minced) turkey, I added a little bit of chicken broth, Italian style bread crumbs, Worchestershire sauce, garlic salt, Adobo seasoning and onion soup mix. Mix and roll into tiny meatballs.


Drop meatballs in when soup starts to boil. Omit if vegetarian or replace with soy/tofu/seitan 


Add sea salt & ground black pepper & Maggi seasoning.
It takes about an hour to cook. I turn it down to a simmer after it boils.
Right near the end, add some hot sauce if you want some extra oomph. I used Crystal hot sauce which I "borrowed" from a restaurant in Ohio. (Please don't tell anyone). I almost always use a bit of hot sauce in my soups. Not good for flus but cracking good for colds. Kills them every time.




This soup is not only pretty but so easy to make that I think my cats could make it, if they were willing to be trained, but unfortunately they're pretty stubborn. So, yeah. ENJOY!
